Season the perch fillets with salt and white pepper
Stack them on topo of each other in two piles
Wrap the piles tightly in a plastic wrap
Heat the owen to 75 C
Put the packages in an owen pan
Bake them in the owen until the inner temperature is 43 C
Remove the plastic wrap
Fry the perch piles in a pan in plenty of butter
Peel the potatoes
Cook them in salty water
Smash the potatoes
Add butter and dill
