Shooting star, or Stjerneskud in Danish, is the name of this meal. Why go low, when you can go high :)

My favorite food is food with an experience. A great experience contains 4 ingredients.
1: What you eat
2: What you drink
3: Who you enjoy your meal with
4: Where you eat

1: Stjerneskud, or shooting star, is a classic Danish open-faced sandwich. The kind you would see at most lunch restaurants or cafés in Denmark. A stjerneskud is white bread, with a piece of fried and poached fish and cold-water shrimps.
2: My drink is one of my favorite beers, the French - Kronenburg Blanc, wheat beer. I think it goes well with fish.3 + 4: Normally I would go to a Danish restaurant to enjoy a Shooting Star with friends or family. As Denmark is in lockdown, the only choice was my kitchen, but with a great company by my oldest son.

You will need

Shooting Star, (Stjerneskud)This is a Danish classic typically served for lunch, though it does make a delightful dinner. There are many iterations of it. The original recipe served only 1 person; I’ve quadrupled it for 4 servings.4 slices sandwich bread or another light bread200 g butter8 plaice fillets4 shots of white wineFlour and breadcrumbs for breading4 eggs200 g peeled and cooked native shrimp4 lettuce leaves4 tsp. lumpfish caviarLemonDillDressing:4 tbsp mayonnaise4 tbsp. crème fraîchea few dashes of ketchupa few dashes of HP Sauce4 tsp. lobster stocksalt and pepper

Recipe

Dressing: Mix everything in a bowl and set it aside.- Steam the white plaice filets (the underside) for ca. 5 minutes in white wine in the oven at 125° C.- Bread the remaining 4 filets in flour, egg, and breadcrumbs and fry them golden in half of the butter in a frying pan.- Toast the bread crisp and lightly golden in a pan in the rest of the butter.- Place lettuce leaves on the bread, then the fried filets, top with the steamed filets. Garnish with shrimp, lemon slices, caviar, and dill sprigs.- Serve the dressing on the side in a little bowl.
